Nel 2008 Bortolomiol sceglie di convertire i propri vigneti alla coltivazione biologica, approccio agricolo che vuole preservare l’ambiente naturale del vigneto intraprendendo un processo produttivo teso ad ottimizzare la qualità della produzione nel rispetto dell’ambiente e della salute umana. L’obiettivo è quello di creare un vero e proprio Distretto del Biologico nel cuore della Denominazione. Dal vigneto biologico sito nel cuore di Valdobbiadene – all’interno del Parco della Filandetta – nasce Ius Naturae Valdobbiadene Prosecco Superiore DOCG Biologico, naturale conseguenza della filosofia produttiva attenta alle pratiche di viticoltura sostenibile e rispettosa dell’ambiente.
