L’obiettivo principale di Castell’in Villa è quello di produrre vini di alta qualità da vigneti a bassa resa.

I vini principali sono, naturalmente, Chianti Classico e Chianti Classico Riserva. Di quest’ultima tipologia fa parte la selection Riserva ‘IN: massima espressione del Sangiovese. Altri due vini che hanno la loro importanza sono Santacroce e Poggio delle Rose. Viene prodotto anche il tradizionale Vin Santo del Chianti Classico, ma in quantità limitate.
