Progettata per avere il massimo rispetto dell’uva e della sua integrità, è stata costruita secondo i canoni dell’architettura ipogea, consentendo grazie al naturale isolamento termico e all’uso di energia da biomasse un notevole risparmio energetico. Realizzata con i materiali naturali del luogo quali la lava e il coccio pesto si integra perfettamente con la natura incontaminata del territorio circostante. Fresca d’estate e tiepida d’inverno, termoregolata dalla roccia lavica e al riparo dalla luce garantisce in maniera ottimale tutte le fasi di vinificazione fino all’affinamento finale.
